Fluid ounce began as an attempt to link volume to weight: the volume occupied by one ounce of some substance, such as wine in England or water in Scotland. Definitions varied by region and by liquid. When Britain defined its imperial gallon in 1824 as the space of ten pounds of water, the imperial fluid ounce came out so that an ounce of water weighs about one avoirdupois ounce. The US fluid ounce followed a different path and comes from the older wine gallon.

The US fluid ounce is exactly 1/128 of a US gallon, 29.5735295625 milliliters, about 4 percent bigger than the imperial one at 28.4130625 milliliters. American nutrition labels use yet another figure, treating one fluid ounce as 30 milliliters, a convenient rounding for serving sizes. The name is a trap, because a fluid ounce measures space while a weight ounce measures mass. A US fluid ounce of water weighs a bit more than an ounce of weight, while a fluid ounce of honey weighs considerably more.

63 US gallons (238.48 L), a quarter of a wine tun. A cask size for wine; tobacco hogsheads were a separate, larger size.

Philologists link the odd name to Germanic cask terms such as Dutch oxhooft and Danish oxehoved, literally an ox head, which English speakers may have bent into hogshead. An act of 1423 first tried to standardise the cask, but sizes still varied by product and place for centuries afterwards.

For wine the figure is 63 US wine gallons, or 52.5 imperial gallons, close to 238.5 litres (238.48 L as used here). It is a quarter of a tun and three quarters of a puncheon, and sits between the tierce at 42 gallons and the butt at 126. Other trades used different sizes: beer hogsheads of 54 gallons, fortified wines of 46 to 57 imperial gallons, and tobacco hogsheads of at least 550 litres.

Hogsheads carried far more than wine. Colonial Virginia shipped tobacco in them, British West Indies sugar averaged about 813 kilograms per cask, and Louisiana counted sugar by the hogshead for most of the nineteenth century. Whisky is typically matured in hogshead casks of about 250 litres.
